Elstar is a Dutch variety of medium late apple from 1972. It is a cross between Golden Delicious and Ingrid Marie. It produces medium sized, rounded fruits with yellow-green skin profusely blushed red on insolated parts. The flesh is pale yellow, moderately juicy and crispy, and the taste is excellent and predominantly sweet with low acidity. It can be harvested from September but best fruit quality is when picked from October onwards. It has long storage until late February.
It is partially self-fertile but for high yield will need a pollinator such as Braeburn, Fuji, Gala, Gloster, Golden Delicious, Reine des Reinettes, Royal Gala, Honeycrisp, Kent, James Grieve, Red Delicious, Starking, Spartan.
Apple trees will grow in almost any well-drained soil but for best results provide them with deep, fertile soil and keep it moist at least 6 months after transplanting, and in early summer when fruit is formed. Pruning can be done in frost-free periods of winter but it grows best being left to its own devices. Hardy to min. -29 °C (USDA zone 5).
